HARVEST

It is one of the most important moments in the wine making of Bodegas Martínez Sáez.

Grapes are harvested when they are at just the right point of maturity, an important factor for winemaking. For this reason parcels are all selected and analysed, to obtain the optimum moment of each variety.
This is a key moment because the better the harvest, the better the elaboration of our wines.

The work of the vineyard embraces many tasks throughout the year. Thinning clusters, green pruning and preventive treatments are just a few examples.

White grapes requires an early harvest due to high temperatures, so at the beginning of August harvest begins.

Our grapes require great care and daily work. Harvest takes place at night to allow the entry of colder grapes and ensure that they arrive in perfect conditions. This essential factor combined with the altitude of the vineyards gives quality to the wines.

Barrels

Bodegas Martínez Sáez makes aged wine in select oak barrels.

Barricas

Our barrels are made from the finest Wood and they are no older than two years. We use French and American oak barrels of small grain. We carry out the proper preservation of these barrels. Only in this way we can ensure the excellence of our wines.

Barrel aging is essential for the elaboration of a good wine. It adds volume, textures, flavors and bouquets.

With French oak we get elegant wooden notes, subtle nuances, like nuts, honey, snuff, spices, etc., and with American oak barrels we give personality to the wine giving hints of vanilla, coconut, coffee, cacao and sweeter flavors, due to the high roasted of them.

We use the highest quality natural corks, located in a fully-conditioned room and free of humidity, all year round.
